Fermented in small stainless steel vats with daily manual working and monitoring the progress of the fermentation. Post pressing the new wine was transferred to small French oak barrels for maturation. Chatterer Merlot Cabernet was blended and bottled 18 months later when the oak and fruit were in harmony.
