A subtle and complex sparkling wine, made from pure Pinot Noir. Very pale pink in appearance, this could easily be top notch rosé Champagne, with its classy strawberry ice cream, rose and violet petal nuances. A mouthful of red fruits: wild strawberries, blueberries, and redcurrants, balanced by citrus freshness of grapefruit and notes of fennel and fresh herbs. The ageing is manifested with hints of butter puff pastry and creme caramel. Alongside the maturity is exceptional freshness, and a beautifully fine, well-integrated mousse of super-fine bubbles.
